If you could clone one element from another city you’ve visited — a building, a cultural institution, a common street food, etc. — and bring it back to your own hometown, what would it be?
“I don’t know.”
“Fries. I would clone French Fries; there are no fries in Israel.” Pomi gave me a triumphant look.
“There are. You can get fries at all the fast-food chains.”
“Skinny potato sticks. Pale, undercooked and cold within five minutes after you sit down to eat.”
“You can get a chunkier version in many restaurants, as a side dish.”
“Soggy fare. I am not talking about those either. I mean real fries. Belgian fries, the twice cooked ones. Crispy on the outside and soft in the middle, they are the best, with a huge dollop of mayo on top. There’s nothing like it. Why don’t you make some?”
